Rice pudding with peaches on the bottom from Elizabeth Ellicott Lea's Domestic Cookery, 1845... the first Maryland cookbook. Rice was boiled in milk, sweetened, put over peach slices, then baked for two hours. When warm it was like other rice puddings, but it compacted as it cooled.

Rice puddings
My grandmother's recipe, baked in her rice pudding bowl (left). Another baked for 4 hours adding milk every half hour until extremely thick. Or boiled around an apple in a cloth. Or a c1800 MD manuscript recipe boiled with suet. Or used rice flour. Or burnt rice...

Rice Flour
Racahaut, blanc mange, snow-balls, flummery, breads, cakes, cookies, puddings, custard, waffles, journey cakes, slap jacks, fried bread and more could be made from rice flour. Who knew??

Instant Cocoa -- Broma, Soluble Chocolate and Racahaut
By 1845 there were several 'mixes' to prepare hot
chocolate. Fry's Broma and Soluble
Chocolate required no boiling or milling to keep dissolved. Ads for Baker's cocoa stressed that it could
be made in 1 minute at the table.
