Rice pudding with peaches on the bottom from Elizabeth Ellicott Lea's Domestic Cookery, 1845... the first Maryland cookbook. Rice was boiled in milk, sweetened, put over peach slices, then baked for two hours. When warm it was like other rice puddings, but it compacted as it cooled.

Rice puddings
My grandmother's recipe, baked in her rice pudding bowl (left). Another baked for 4 hours adding milk every half hour until extremely thick. Or boiled around an apple in a cloth. Or a c1800 MD manuscript recipe boiled with suet. Or used rice flour. Or burnt rice...

800 pound Plum Pudding - boiled in huge brewing kettle for a June fair
A plum pudding for the June 7, 1809 Bartholomew Fair at Paignton was so enormous it had to be boiled in a "brewer's copper." How big? 400 lbs of flour, 175 lbs of suet, 140 lbs raisins and 240 eggs to make a pudding weighing in at 800 lbs! It was boiled from Sat. morning until Tues. evening and pulled in a wagon by 8 oxen.

Spring Puddings and Rhubarb
Rhubarb, with its strikingly red stalks and large green leaves, became popular in Victorian England and by 1822 was the main ingredient in Spring Puddings. The "pie-plant" was forced by the warmth of the waste water from the boilers of the factories... in Yorkshire...

Emma Darwin kept a small handwritten recipe book, and about fifty of her recipes with modern interpretations are in Mrs. Charles Darwin's Recipe Book which also contains a lengthy information section. Christmas Plum Pudding
The 'Christmas' Plum Pudding during the Victorian Era became distinguished from the centuries old plum puddings. It contained rich ingredients, and many were served flaming. A few cookbook authors, such as the British chef Soyer, had a seperate Christmas section.
