Pumpkin chips using vinegar, sugar or honey, cinnamon, mace and cloves are pictured, left. The darker chips on the left were made with honey, those on the right with sugar. The honey ones are more mellow, covering the vinegar tang found in the sugared ones.

Pumpkin waffles made with yeast
... then dipped in melted butter and rolled in cinnamon sugar. Once again it is time to dig into my hundreds of old recipes on pumpkins. For the past few years I've tried this 'newer' 1906 recipe, and not been successful so far. Does any one have ideas on historic pumpkin waffles with yeast? or without?

Pumpkin candies made from pumpkin pickles or chips
Several past posts have dealt with pumpkin chip recipes from 1770 and 1840 and how to cut pumpkins into chips HERE. Chips or sweet pickles can be made into candies by rolling them in sugar.

WWI Pumpkin Pie
On the 11th hour of the 11th day of the 11th month of 1918 an armistice [ceasefire] on the Western Front took effect. Some countries commemorate Armistice Day, but in the US we remember our fallen and vets on Veteran's Day. During World War I bakers and cooks were recruited who used the Army manual for cooking, including a recipe which made 15 pumpkin pies.Tuesday, November 22, 2011

Preserved Pumpkin Chips - 1840 & 1770
Pumpkins can be made into many other recipes other than pie. Be sure that they are of the 'eating' variety not field or jack-o-lanterns. These Chips are sweet preserves to accompany dishes or as a snack. The 1840 recipe (and the modern interpretation) results in alot of water being taken out...
