Advice from the creator of Kentucky Derby Benedictine sandwiches - Jennie C. Benedict

Virginia "Jennie" Carter Benedict (1860-1928) created Benedictines - the green cucumber sandwich common at Kentucky Derby parties.  In the late 1890s she was forced to earn a living and rapidly developed her cooking business.  She wrote two cookbooks, both contained advice for women wanting to enter the cooking profession.

Kentucky Bourbon Balls

Ruth Hanly (1891-1973) and her friend Rebecca Gooch, both in their 20s, left teaching in 1919 to start a candy business – Rebecca Ruth Candies - in Frankfort Ky.  The company, still in business, still sells the famed Bourbon Balls it created in 1938.

Kentucky Derby Benedictines

The Kentucky Derby is run this Saturday.  Benedictines - green cucumber sandwiches with cream cheese and onions - were created in the 1890s by Jennie C. Benedict, a caterer in Louisville.  Although she wrote two cookbooks, neither contained her famous recipe.

Mint Juleps for the Kentucky Derby

The drink of the Kentucky Derby is the sweet refreshing Mint Julep.  If you go to Churchill Downs, the Mint Juleps are served in yearly glass glasses.  More Derby dishes HERE. A British visitor in 1839 described the drink.
